The clusters are given the classic, extremely gentle pressing; the juice is gravity-settled then fermented in temperature-controlled steel tanks at 17-18°C.

The “still” style of Prosecco, or that without effervescence, represents the most traditional version of the very essence of Prosecco.
This version’s secret of success lies in its significant cellarability and in its graceful delicacy.
Its colour is deeper compared to the more well-known sparkling version, and the nose show-cases all of the varietal characteristics of the grape.
The palate shows a consistent yet delicate progression, and an upfront, immediate pleasurableness.
It partners well with soups and salads with the classic ingredients Treviso radicchio, asparagus, mushrooms, with salumi, and soft cheeses, as well as with the lighter styles of Asian dishes.
