Wine production

Vinification
The grapes are pressed gently, then the must is given a gravity settling and fermented in temperature-controlled tanks at 18°C.
Secondary fermentation
The wine receives its effervescence through the Martinotti-Charmat method.
After a period of maturation sur lie and then tartaric stabilisation, the wine is filtered and bottled.
Ageing
1 month in steel pressure tanks.

Tasting

This particular wine embodies all of the qualities that one can expect from a Brut-style Prosecco.
It displays the complex aromatics, refreshing crispness, velvety mouthfeel, judicious alcohol, and finely-calibrated effervescence that combine to create a sparkling wine that truly showcases the quintessence of the Glera grape and its ability to hold over time.
Its subtle green-gold colour immediately signals the appealing crispness to come, along with the fragrant fruit and springtime blossoms on the nose.
This Prosecco makes a wonderful aperitif wine, as well as a fine partner to seafood first courses, fried foods in general, and fresh cheeses.
Best enjoyed at 6-8°C.
